Grilled Rack of Pork with Sweet Potato Mash Ingredients and Procedures.

Ingredients for Grilled Rack of Pork:
  • 1 Pc 8 Bone Rack of Pork (Center Cut, Frenched)
  • 2 Tbsp Mustard
  • 1/2 Tbsp Rosemary
  • 1/4 Tbsp Thyme
  • 1 Tbsp Olive Oil 
  • Salt
  • Pepper

Ingredients for Sweet Potato Mash:
  • 4 Pcs Sweet Potatoes (Boiled)
  • 1 Cup Milk
  • 1 Tsp Paprika
  • 2 tbsp butter
  • Salt
  • Pepper

Ingredients for Red Wine Reduction:
  • 2 Cups Red Wine
  • 1 Cup Beef Stock
  • 2 Sprigs Rosemary
  • 3 Sprigs Thyme
  • 1 Pc Bay Leaf
  • 1 Tbsp Flour
  • 1 Tbsp Butter
