How to Make Ginger Braised Pork Belly

Ginger Braised Pork Belly Ingredients and Procedure.

2 L chicken stock
3 pcs star anise
¾ cup dry sherry or sake
2 kg pork belly, in one piece, bones removed
1 large red chili, seeded and cut into thin strips
1 thumb ginger, peeled and thinly sliced 
4 pcs lemongrass, coarsely chopped
1 head garlic, minced
½, tsp (or less) dried chili flakes
1 1/3 cups dark soy sauce
200 g brown sugar
1 tbsp black peppercorns
Cilantro sprigs 
6-7 spring onions , trimmed and thinly sliced into shreds
2-inch cinnamon stick 
6 tbsp balsamic vinegar
