Idol sa Kusina- Holy Week Recipe- TUNA PAKFRY

Here's Idol sa Kusina- Holy Week Recipe for Episode 85 / March 24- TUNA PAKFRY.

  • 500g tuna tail part
  • Black pepper to taste
  • 1 thumb sized ginger, pounded
  • 4 cloves garlic, pounded
  • 1 red onion, wedged
  • 3 pcs finger chili
  • 4pcs fresh sampaloc or 2 tbsp tamarind paste
  • 1 tsp patis
  • 2 cups water
  • 1 cup cornstarch
  • Oil for deep frying
  • 1/3 cup slurry
  • 1 tbsp soy sauce
  • 3 pcs calamansi
  • 1-2 labuyo, sliced
  • Cilantro for garnish

1. In a pot, boil water with onion, garlic, ginger, tamarind paste, finger chili, patis and black pepper. 
2. Add the tuna and simmer until cooked and tender.
3. Remove tuna and dredge in cornstarch. Season with salt and pepper and deepfry. Set aside.
4. Meanwhile, continue to simmer the tuna broth until reduced, add labuyo, soy sauce and slurry to thicken then add calamansi. Serve sauce with tuna.
5. Garnish with cilantro.

Here's Idol sa Kusina- Holy Week Recipe, Episode 85 / March 24- Cheesy Chili Fish Wonton w/ Red Cabbage Slaw.

  • 400g tilapia fillets, roughly chopped
  • 1 egg beaten
  • 2 sprigs spring onion
  • 1/4 cup carrots, finely diced
  • 1-2 pcs finger chili, chopped
  • 1/4 cup mushroom, chopped
  • 1 pack Cheese slices
  • 1 pack wanton wrappers
  • Oil for deep frying

1. Place fish in a food processor, pulse and set aside.
2. In a bowl, combine onion, mushrooms, carrots, finger chili, spring onion and fish.
3. Season with salt and pepper.
4. Spoon fish mixture on the center of the wonton wrapper. 
5. Top with sliced cheese and fold into triangles and seal edge with beaten eggwash.
6. Heat vegetable oil in a frying pan. Fry wonton until golden brown on both sides.
7. Top over red cabbage slaw and garnish with parsley.

Red Cabbage Slaw

  • 1 pc orange, juice
  • 1/2 pc lime, juice
  • 1/2 small red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon honey
  • 1/4 cup oil
  • Salt and pepper to taste
  • 1/2 head red cabbage, finely shredded

1. Combine orange and lemon juice with honey, oil and whisk together.
2. Add in the rest of the ingredients and season with salt and pepper and toss.
3. Let sit for 15-20 minutes in the refrigerator before serving.

Idol sa Kusina Recipe- SINAING NA TULINGAN

Here's Idol sa Kusina- Holy Week Episode Recipe- March 24- Sinaing na Tulingan.


500g small or medium sized tulingan, cleaned and gutted
1/3 cup dried or 1 cup fresh kamias
30g pork fat (sliced into strips)
1/2 cup water
1 tbsp rock salt
Ground pepper to taste
2 cloves garlic, crushed
1 red nion sliced
2-3 pcs Finger chili (optional)

1. Place the pork fat, onions, and half of the kamias at the bottom of the clay pot.
2. Top the tulingan and arrange each piece properly. Season with salt and pepper.
3. Add the remaining kamias and other ingredients over the layer of tulingan.
4. Bring to a boil. And let it simmer for 30 to 45 minutes until the fish is cooked. Garnish with spring onions and serve with rice.

Idol sa Kusina Recipe- ADOBONG PUSIT SA GATA

Here's Idol sa Kusina Recipe for Episode 84 / March 17- ADOBONG PUSIT SA GATA.

  • 400g baby squid, cleaned and ink seperated
  • 1/3 cup white vinegar
  • ¼ cup soy sauce
  • ½ cup coconut milk
  • 2 cloves garlic, crushed
  • 2 stalks of spring onions
  • 1 bay leaf
  • 2 pcs. labuyo
  • 1 cup cornstarch
  • oil for deep frying
  • cilantro for garnish

1. Put squid in a pot with all the ingredients.
2. Cook over low heat until squid is tender. Adjust seasoning to your preference.
3. Remove squid when done and dredge in cornstarch.
4. Deep fry and set aside.
5. Meanwhile, let the sauce simmer until reduced and serve on the side.
4. Garnish with cilantro and serve hot with steamed rice.

  • 2 tbsp oil
  • 1 medium onion, sliced
  • 3 cloves garlic, crushed
  • 2 tsp. dilaw (turmeric), cut into sliced
  • 500 g chicken, cut into serving pieces
  • 1 to 1½ tsp. peppercorn
  • salt to taste
  • 1 cup vinegar
  • 1 cup water

1. In a pan, saute onion, garlic and dilaw in cooking oil.
2. Put in chicken, peppercorn, salt, vinegar and water. 
3. Simmer until chicken is cooked through and tender.
4. Garnish with toasted garlic and spring onion and serve with rice.

Here's Idol sa Kusina Recipe for Episode 84 / March 17- ADOBONG TUYO.

  • 500g pork liempo, cut into 2-inch chunks
  • 2 tbsp. oil
  • 3-4 cloves garlic
  • 200g chicken liver
  • 1-2 pcs. labuyo
  • 2 pcs. laurel leaf
  • 1 tbsp. whole peppercorn
  • 1/3 cup soy sauce
  • ½ cup vinegar
  • 1 cup water

1. In a pan, saute chicken liver and labuyo for 2-3 minutes and season with salt and pepper. Remove from pan and puree (add little water if needed when blending). Set aside.
2. In the same pan, brown the pork and add the garlic until fragrant.
3. Add in the pureed liver and pour the soy sauce, vinegar, water, peppercorns and bay leaf.
4. Simmer for 2-2½ hours until pork is soft and sauce has thickened.
5. Garnish with spring onions and serve with rice.

DOH released IRR on stem-cell therapy

The Department of Health (DOH) released on March 20, 2013, the implementing rules and regulations regarding stem cell and cell-based therapy in the country.

“Our efforts at regulating the practice of stem-cell therapy in this country are aimed at safeguarding the welfare of our patients and the general public by making safe, effective and ethical stem-cell modalities and practices are within emerging international and global standards considering the very complex nature of this therapy,” Secretary of Health Enrique Ona said.

DOH Administrative Order 2013-0012 (AO 2013-0012), also known as Rules and Regulations Governing the Accreditation of Health Facilities Engaging in Human Stem Cell and Cell-based or Cellular Therapies in the Philippines, is aimed at ensuring that human stem cell and cell-based therapies in the country are safe and effective for their intended use.

It also intends to prevent the introduction, transmission, and spread of communicable diseases by ensuring a minimum quality of service and staff qualification rendered by hospitals and other health facilities capable of utilizing human stem-cell preparations and cell-based therapies.

These guidelines will classify which stem-cell preparations and therapies will be registered and allowed with certain restrictions. Preparations that will be allowed include those with adult human stem cells, human umbilical cord stem cells, and human organ-specific cells.

The AO restricts the use of genetically altered stem cells and tissues of human adults and the umbilical cord, fat-derived human stem cells, and live animal stem cells; the AO also prohibits for human treatment and research the creation of human embryos and their derivatives, the use of aborted human fetal stem cells and their derivatives, and plant parts labeled as stem cells.

Health facilities utilizing stem cell preparations and cell-based or cellular therapies will be mandated to comply with the guidelines set by the Bioethics Advisory Board composed of the DOH, the National Transplant Ethics Committee, the Philippine Food and Drug Administration (FDA), a government health facility, a private organization or health facility, academicians, researchers, and local and international experts.

This Board will ensure that ethical and professional standards are upheld and that contentious scientific, ethical and legal issues are addressed. Charges and complaints shall be addressed to the DOH Bureau of Health Facilities & Services and the Philippine FDA.

Meanwhile, an Institutional Review Board will review and approve stem-cell therapies, based on the guidelines set by the Bioethics Advisory Board. There are minimum standards for personnel qualifications, physical facilities, equipment and supplies and work environment, which will be prescribed by the guidelines. Proper record keeping in each facility that will provide readily available information on each donor, patient, procedures on stem cell and cell-based therapies will be mandated as well.

DOH Administrative Order 2013-0012 takes effect 15 days after March 20, 2013, its publication date, and shall be reviewed three years after its implementation.

Idol sa Kusina Recipe- Adobong Lechon

Here's Idol sa Kusina Recipe for Episode 83/March 10-Adobong Lechon/

  • 2 lbs lechon chunks (belly part)
  • 2 tbsp garlic, minced or crushed
  • 5 pieces dried bay leaves
  • 2 stalks lemon grass, pounded
  • 1-2 pcs bird’s eye chili, chopped (optional)
  • 4 tbsp vinegar
  • 1 cup soy sauce
  • 1 tbsp whole pepper corn
  • 1 cup water
  • salt to taste 
  • toasted garlic for garnish


1. Heat the pot and put-in the lechon to brown just a little.
2. Add water, soy sauce, vinegar, garlic, lemon grass, chili, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 20-45minutes.
3. Garnish with toasted garlic and serve hot with white rice

Here's Idol sa Kusina Recipe for Episode 83/March 10- Bakalaw Tuyo.

  • 350g of tuyo
  • 2 tbsp olive oil
  • 3 cloves garlic, peeled and minced
  • 1 white onion, chopped
  • 1 thumb sized ginger, crushed
  • 1/2 cup sun-dried tomatoes, sliced
  • 1 green finger chili, sliced
  • black pepper to taste
  • 2/3 cup green olives 
  • 1 cup water

• Soak dried fish in a bowl of water for 5-10 mins.
• Heat olive oil in pan. saute ginger, onions, sun-dried tomatoes and garlic. Add 1 cup water and let it simmer. 
• Add dried fish and olives. Sprinkle some ground peppercorn. Cover and let the dried fish simmer in tomato sauce for 5 to 8 minutes.
• Garnish with green chilis.
• Serve with rice.

Here's Idol sa Kusina Recipe for Episode 83/March 10- Pocherong Bulalo.

  • 1 kilo beef shank and beef cubes
  • 1 tbsp worcestershire sauce
  • 5 cloves garlic, minced
  • 1 white onion, chopped
  • 1 cup celery, chopped 
  • 1 cup tomato sauce 
  • 1/2 cup tomato paste
  • 10 cups beef stock
  • salt and pepper to taste
  • 2 big Spanish chorizo, sliced
  • 4 pcs medium potatoes, peeled and quartered
  • 1 big carrot, peeled and sliced
  • 1 cup green beans, sliced
  • 2 cups Chinese cabbage, sliced in 2-inch pieces
  • spring onions for garnish
  • 6 pieces saging saba, fully ripened, boiled separately, for serving

1. Pre-marinate the beef pieces in the Worcestershire sauce. Cover and refrigerate for at least 30 minutes to an hour.
2. In a heavy stock pot, over medium high heat, add the vegetable oil and saute the garlic, onions and celery. Add the Spanish chorizo slices for 1 to 2 minutes to flavor the oil, then remove the chorizos and set aside.
3. Add the beef chunks, and pan sear for about 5 to 8 minutes till beef gets brown.
4. Add the tomato sauce and paste. Pour in the beef broth and season with salt and pepper. Let the broth boil for 1 to 2 minutes, then lower heat to a slow simmer. Cover pot and cook on slow fire till beef chunks are soft and fork-tender for about 2 hours.
5. Towards the end of the cooking, add the potatoes, green beans and carrots. Cook them for about 20 minutes till they soften and blend in the tomato sauce flavors. Lastly add the cabbage, and the chorizos. Garnish with chopped parsley. Serve hot with boiled saba and rice.

Jollibee Singapore Now available at Lucky Plaza

Philippines fast-food giant, Jollibee is now available in Singapore! Jollibee opens it's first Jollibee store in Singapore on March 12, 2013. According to Yahoo news, long queue started as early as 7:40 am today much to the delight of the crowd.

"The Filipino fast food joint opens this morning at Lucky Plaza much to the anticipation of Filipinos living here. Ms Marites Obien, the first customer in the queue, said: “I waited five years for them to come to Singapore. The fried chicken is very Filipino. The flavour is different from the other fast food joints.”

Noma Restaurant sickens 63?

According to CBS News, the Danish Veterinary and Food Administration conducted an investigation on the incident. Morten Lisby, the agency’s spokesperson reportedly described the outbreak that caused vomiting and diarrhea as “massive.”

Peter Kreiner, Noma managing director, apologized for what happened and said earlier tracking of the source of infection is underway.

Noma co-owner Rene Redzepi said that based on findings, Norovirus, the winter flu bug was the cause of infection.

The official statement reads:
“At noma, having happy and satisfied guests is paramount to our daily work and lives, and is our number one priority.
Unfortunately during week 7 (February 12th -16th) 2013, there were a number of cases where guests at noma where hit by Norovirus after their visit. It is a matter that deeply affects us all, and that we sincerely regret.
Since receiving the news, we have been working closely with the Danish Food & Drug Administration to find the source of the problem. As a result of our collaboration, we have determined the most likely cause of illness was Norovirus, which may have been brought in by a member of staff, who was symptom-free.
As a precaution the kitchen and restaurant have been deep cleaned several times following Health Inspection guidelines. This has been done on top of the overall cleaning, which takes place several times a day. Finally, all foods from week 7 were destroyed.
We have been in direct contact with all the customers affected.”

Idol sa Kusina Recipe- Beef Curry

Here's Idol sa Kusina Recipe for Episode 82 / March 3- Beef Curry.

  • 1 kg lean beef (rump steak) cut into cubes
  • salt and pepper to taste
  • 4 tsp. garam masala
  • 4 tablespoons yogurt
  • 4 tablespoons olive oil
  • 2 large white onions, finely chopped
  • 4 garlic cloves, peeled and grated
  • 1 thumb-sized ginger, grated
  • 2 tbsp. tomato paste
  • 2 tbsp. sugar
  • 1 can chopped tomatoes
  • 800 ml beef stock
  • handful coriander
  • 15 -20 curry leaves
  • 4 green finger chilies, finely chopped

For the spice mix:
  • 4 tsp. ground cumin
  • 4 tsp. ground coriander seeds
  • 1 tsp. ground fennel seed
  • 4 tsp. curry powder

1. For the spice mix, combine cumin, coriander, fennel and curry powder. Set aside.
2. Season beef with salt and pepper, garam masala and sear in a hot casserole. Take the beef out and set aside.
3. In the same casserole, add the onions, garlic, chilli, ginger and add the sugar to help caramelise the onions, followed by the ground spice mix, stir and cook for a minute until the onions are soft.
4. Add the seared beef, chopped tomatoes and tomato paste, stir over a medium-high heat for a few minutes and then add the beef stock and curry leaves. Cover the pan with a lid and simmer very gently, stirring occasionally, for approximately 30 mins. or until the beef is tender.
5. Serve hot with white rice.

Here's Idol sa Kusina Recipe for Episode 82 / Mar 4-TOM YUM SOUP.

  • 800 ml. chicken broth
  • 3 stalks fresh lemongrass, sliced in 2-inch pieces
  • 4 kaffir lime leaves
  • 1 thumb sized ginger galangal or ginger, sliced
  • 3 tomatoes, wedges
  • 2 tbsp. tamarind paste
  • 2 red chilis, sliced
  • 2 tbsp. fish sauce
  • 1 ½ tsp. sugar
  • 1 can straw mushrooms, rinsed and halved
  • 500g large shrimp, peeled with tails on
  • 2 limes, juiced
  • 1 stalk spring onions, sliced
  • 1 handful fresh cilantro

1. Bring the stock to a boil over medium heat in a saucepan. Add the lemongrass, kaffir lime leaves, galangal, tomatoes, tamarind paste and chilis. Lower the heat to medium-low, cover, and simmer for 15 minutes.
2. Then add the fish sauce, sugar, and mushrooms. Simmer for 5 minutes. Toss in the shrimp and cook until they turn pink. Remove from the heat and add the lime juice, spring onions, and cilantro. 
3. Adjust seasoning with salt and pepper. Serve hot.

500g sweet potato vermicelli noodles (dang myun)
2 tbsp. sesame oil
1 white onion, thinly sliced
3 spring onions (white and green parts), chopped
2 cloves garlic, minced
½ cup dried shitake mushrooms, soaked in water, drained, and sliced
1 small carrot, julienned
1 small zucchini, julienned
2 cups spinach leaves
2 tbsp. soy sauce
2 tsp. rice vinegar
1 tsp. sugar
1 tbsp. toasted sesame seeds
Salt and pepper, to taste

1. Bring a large pot of water to boil and cook the noodles until al dente. Drain, rinse under cold water, drain again, and set aside.
2. Heat the sesame oil in a large skillet over medium heat. Add the onions, spring onions, garlic, mushrooms, carrots, and zucchini, and stir fry until softened, about 5 minutes.
3. Add the spinach, noodles, soy sauce, rice vinegar, and sugar. Turn the heat down to low and stir-fry for another 2 minutes. Turn off heat, toss in the sesame seeds, and season to taste with salt.
4. Serve hot.

How to Join Karinderya Wars on TV5?

The new and most exciting cooking competition in the country has arrived! TV5 will soon launched the first "luto-negosyo challenge show" on Philippine TV called "Karinderya Wars".

The competition is open to all 18 years old and above, with or without a professional cooking experience. Contestant should be recommended or nominated by others and currently residing in Metro Manila.

Nomination may be sent until March 8 via email at or at 1003 10/F Paragon Tower, Reliance St. corner EDSA, Mandaluyong City.
