*RECIPE by NESTLE ALL PURPOSE CREAM*

Ingredients:
300 grms. elbow or salad macaroni, cooked al dente
2 cups cooked, flaked chicken meat
1 cup diced Cheddar cheese
1 medium carrot, diced
½ cup raisins
½ cup chopped celery

For dressing, combine:
1 pack NESTLE ALL PURPOSE CREAM
1 cup mayonnaise
2 tbsp. sugar
Salt to taste

Procedure:
1. Toss together all ingredients with prepared dressing. Chill for at least an hour before serving.

Idol sa Kusina Recipe- CHICKEN BALLS IN PINEAPPLE CART

Here's Idol sa Kusina Recipe for EPISODE 21 / Nov.27- CHICKEN BALLS IN PINEAPPLE CART.

Ingredients:
1 k minced chicken meat
2 pcs whole pineapples, fresh and big
2 pcs. carrots, brunoise
1 pc. bamboo stick
1 pc. white onion, brunuiose
50 grms. pring onion, chopped
200 grms. cornstarch
20 grms. flour
2 pcs. eggs. beaten
50 grms. celery chopped
2 liters oil for deep fry
1 tsp. salt
1 tsp. white pepper powder
1 tsp. chicken powder seasoning

Procedure:
1. Combine minced chicken meat, carrots, onion, celery, spring onion, egg, salt, pepper, chicken powder seasoning, corn flour and all purpose flour.
2. Form into balls and deep-fry until golden brown and set aside.
3. Toss golden brown chicken balls into sauce and set aside.
4. Carve pineapple and cut into 2 slices round of fresh pineapple then carve to form a wheels then cut on center by using corer, then fill with carrots corer into the wheels and set aside.
5. Carve other whole pineapple; cut into carved half then remove pineapple meat inside, then assembly two wheels with bamboo stick both sides to shape like a cart trolley.
6. Place balls over the top and garnish with spring onion.

For sauce:

Ingredients:
1 pc. green bell pepper, brunoise
1 pc. red bell pepper brunoise
10 grms. garlic, chopped
250ml. pineapple juice
1 tbsp. white sugar
100 grms. cornstarch, dissolved
1 jigger brandy

Procedure:
1. Sauté garlic, bell pepper, flambé with brandy.
2. Add pineapple juice, sugar then thicken with dissolved cornstarch. Season to taste.

Idol Sa Kusina Recipe- RUDOLF’S HOTDOG ROLL

Here's Idol sa Kusina Recipe for EPISODE 22 / Nov.27- RUDOLF’S HOTDOG ROLL.

Ingredients:
6 pcs. hotdogs
500 grms. puff pastry
2 pcs. eggs
100 grms. flour
30 grms. vegetable shortening

Procedure:
1. Cut into 4 both sides of hotdog then flatten the puff pastry and cut five inches long by two inches (5x2).
2. Brush with beaten egg and place the hotdog and roll it.
3. Have ready baking sheets, brush with vegetable shortening and arrange sausage with puff pastry.
4. Brush on top with beaten egg then bake in oven for 30 minutes in 250°F or until golden brown.

Here's Idol sa Kusina Recipe for EPISODE 21 / Nov. 20- TOLA HIPON SINIGANG.

Ingredients:
6 pcs. tiger prawns, peeled with head and tails
300 grms. string beans, blanched
300 grms. radish, blanched, cut into strips
300 grms. eggplant, blanched, cut into strips
300 grms. banana heart, sliced thinly
300 grms. kangkong, blanched
3 pcs. sili pangsigang
3 pcs. tomato, squared
1 pc. white onion, sliced
2 liters Sinigang
1 tsp. baking soda

Procedure:
1. Blanch separately with baking soda the white raddish, string beans, eggplant, banana heart and kangkong. Set aside.
2. Have ready Sinigang in pot and you may add tomato, white onion and sili pansigang, allow to boil until done.
3. Add in prawns until done.
4. Place vegetables in soup dish and over the top with prawns and sili pansigang.

Idol sa Kusina Recipe- WOW NA WOW KILAW

Here's Idol sa Kusina Recipe for EPISODE 21 / Nov. 20 WOW NA WOW KILAW.

A. Kilaw Lapu-Lapu

Ingredients:
1 k lapu-lapu fillet, sliced thinly
2 cups vinegar
1 cup calamansi juice
1 pc. white onion, julienne
1 pc. cucumber, julienne
100 grms. ginger (julienne by mandolin)
1 pc. green bell pepper, (finely julienne)
2 pcs. red bell pepper, (finely julienne)
50 grms. chopped siling labuyo
2 pcs. siling pangsigang
1 tbsp. salt
1 tsp. white pepper
2 pcs. dayap slices

Procedure:
1. Marinate fish fillet in vinegar for 5 minutes, then squeeze using cheese cloth.
2. Place into mixing bowl, add in calamansi juice, salt, white pepper, cucumber, ginger, green and red bell pepper, sili labuyo and sili pansigang.
3. Toss slowly, then place on salad plate. Garnish with slices of dayap.

B. Kilaw Lato Salad

Ingredients:
1 k green seaweeds (lato)
100 grms. ginger, julienne
2 pcs. red onion, julienne
2 pcs. tomato, julienne
1 pc. green mango, julienne by mandolin
1 cup calamansi juice
2 pcs. cucumber, julienne by mandolin
1 tbsp. salt
1 tsp. white pepper
2 pcs. U.S. lemon for garnish
2 pcs. Siling labuyo

Procedure:
1. Blanch the green seaweeds, then soak in ice water, and strain.
2. Combine all ingredients except U.S lemon. Season to taste.
3. Arrange on salad plate. Garnish with slices of U.S lemon.

1 k chicken, halved and mashed with mullet
¼ cup achuete
1 tbsp salt
5 grms. crushed black peppercorn
500 grms. flour
¼ cup cooking oil
Bamboo skewers
1 cup rice

Procedure:
1. Marinate chicken into salt, crushed peppercorn and achuete, dredge into flour, then skewer into bamboo stick, then mark with hot steel skewers cress cut.
2. Place on baking tray and bake in oven for 30 minutes or until done.
3. Cut into portion size pieces and serve with rice.

Idol sa Kusina Recipe- STUFFED SAYOTE

Here's Idol sa Kusina Recipe for EPISODE 20 / Nov. 13- STUFFED SAYOTE.

Ingredients:
4 pcs. sayote, halved
500 grms. pork giniling
Tomato sauce
1 pc. White onion, brunoise
10 grms. chopped garlic
50 grms. quickmelt cheese
1 cup bechamel sauce
50 grms. mozzarella cheese
25 grms. parsley

Procedure:
1. Peel the sayote and cut into halves. Blanch into water, half done. Set aside.
2. Sauté the garlic and onion until translucent. Add minced pork giniling.
3. Place the sayote halves on baking tray and fill with sautéed pork giniling. Spoon over the top with béchamel and cheese.
4. Place on oven for 5 minutes. Remove from oven, and transfer into Salamander until cheese is melted and golden brown
5. Arrange into the plate and garnish with chopped parsley.

Idol sa Kusina Recipe- SINUKSUKANG MANOK

Here's Idol sa Kusina Recipe for EPISODE 20 / Nov. 13- SINUKSUKANG MANOK.

*RECIPE by NESTLE ALL PURPOSE CREAM

Ingredients:
4 chicken leg quarters, deboned
4 tspn seasoning granules
1 tspn. pepper
1 cup pork sausage, casings removed
½ cup chopped chorizo de bilbao
½ cup chopped sweet ham
12 pcs. quail eggs, boiled and shelled
4 strips cheddar cheese
1 pc. whole pickle, sliced into 4

Procedure:
1. Season chicken pieces with seasoning granules and pepper. Set aside.
2. In a food processor, combine sausage, chorizo and ham and process until well-combined.
3. Lay 1 chicken fillet on a plate skin side down and spread with about one third to one half cup of prepared stuffing, followed by cheese, pickle and quail egg.
4. Roll tightly and wrap tightly with aluminum foil. Repeat with remaining chicken fillets.
5. Place in a dish that will fit your steamer and steam for 45 minutes.

For cheese sauce:

Ingredients:
2 tbspn. unsalted butter
½ cup Nestle All Purpose Cream
½ cup quick-melting cheese
1 tspn. seasoning granules
2 tbspn. chopped spring onions

Procedure:
1. Melt butter in a sauce pan. Add cream and cheese, stirring until cheese is melted.
2. Season with seasoning granules and add spring onions. Serve with chicken roulade.

Here's Idol sa Kusina Recipe for EPISODE 20 / Nov.13- BEEF ROULADE.

Ingredients:
1.5 k top round or flank beef, flatten cut
80 grms. cooked ham, long strips
1 can red pimientos
80 grms. pickles, long strips
2 pcs. hotdog, cut into two
100 grms. quickmelt cheese, long strips
1 liter tomato sauce
Tomato paste
1 big can liver spread
300 grms. mirepoix
1 tspn. Salt
1 tspn. White pepper
2 pcs. bay leaves
4 meters butcher’s string
¼ cup cooking oil
1 liter chicken stock
3 pcs. lumpia wrapper
2 pcs. ripe mango, brunoise
20 grms basil, brunoise
1 liter cooking oil (for deep-frying)
2 tbspn. olive oil
5 grms. parsley

Procedure:
1. Season beef with salt and pepper. Wrap it around combo of ham, pimientos, pickles and hotdog, then tighten with butcher’s string.
2. Pan sear until brown. Set aside.
3. Sauté the mirepoix into roasting pan. Add tomato paste, tomato sauce and chicken stock. Also add bay leaves, salt, pepper and liver spread.
4. Place in oven for 2 hours or until tender. Remove from oven, then take off the butcher’s string. Cut into portion size.
5. Arrange on the plate and spoon over the top the remaining sauces.
6. Garnish with lumpia wrapper basket, fill with mango salsa, and sprinkle with chopped parsley.

Idol Sa Kusina Recipe STIR FRIED BEEF TENDERLOIN AND SWAMP CABBAGE

Here's Idol sa Kusina Recipe for EPISODE 19 / Nov. 6 STIR FRIED BEEF TENDERLOIN AND SWAMP CABBAGE.

Ingredients:
500 grms. beef tenderloin, shred cut
1 k swamp cabbage
2 cups chicken stock
1 tbspn. oyster sauce
1 tbspn. Japanese soy sauce
1 tbspn. dark mushroom sauce
1 tspn. Chicken powder
50 grms. cornstarch
1 tspn. baking soda
1 tspn. Salt
1 tspn. White pepper
1 jigger Chinese wine
1 liter cooking oil
1 tbspn. ginger puree
1 tbspn. garlic puree
10 grms. kinchay

Procedure:
1. Marinate shredded beef tenderloin in oyster sauce, Japanese soy sauce, dark mushroom soy sauce, salt, white pepper, Chinese wine and cornstarch.
2. Blanch into fat-heated cooking oil and set aside.
3. Blanch the swamp cabbage into boiling water with baking soda for 3 seconds then soak into ice cold water.
4. Stir-fry with ginger puree and garlic puree the blanching kangkong, and flambé with Chinese wine. Season with salt, pepper and chicken powder.
5. Place on plate over the top with stir-fried shredded beef, ang garnish! with kinchay.

Idol sa Kusina Recipe for EPISODE 19 / Nov.6 SILLY CRAB WITH CHILI SAUCE.

Ingredients:
3 pcs. male crab (cut into 4)
2 cups hot chili sweet sauce
1 tbsp. garlic puree
1 tbsp. ginger puree
(?) corn flour
100 grms. cornstarch
2 jiggers Chinese wine
1 tbspn. chicken powder
2 tbspn. Japanese soy sauce
50 grms. onion leeks, white part (brunoise)
1 tspn. salt
1 tspn. white pepper
2 cups chicken stock
100 grms. onion leeks, white and green parts (julieene)
25 grms. coriander leaves
1 liter cooking oil

Procedure:
1. Season crabs with salt, white pepper, and Chinese wine. Dredge into corn flour.
2. Deep fry in fat-heated cooking oil, then then set aside.
3. Stir fry ginger puree and garlic puree. Flambe with brandy. Add brunoise leeks, sweet chili sauce, Japanese soy sauce, chicken stock and chicken powder. Thicken with dissolved cornstarch.
Toss the deep fried crabs into the sauce. Place on plate then garnish with julienne onion leeks and coriander leaves.

1 cup orange juice
1 small can mandarin orange wedges
2 pcs. orange zests
1 tspn. Grenadine syrup
100 grms. cornstarch
2 jiggers Chinese wine
1 tbspn. garlic puree
1 tbspn. ginger puree
2 cups chicken stock
1 tspn. salt
1 tspn. white pepper
25 grms. coriander leaves
2 whole oranges for garnish
2 tspn. Sugar
1 tbspn. Chicken powder

Procedure:
1. Marinate chicken in Chinese wine, salt, pepper, cornstarch, and sugar.
2. Blanch into fat-heated oil then strain and set aside.
3. Stir fry ginger and garlic puree into wok. Flambe with Chinese wine. Add chicken stock, orange juice, sugar, grenadine syrup and orange zest.
4. Thicken with cornstarch. Season with salt and pepper.
Place on plate, garnish with orange fan, mandarin wedges and coriander leaves.

Here's Idol sa Kusina Recipe for EPISODE 19 / Nov. 6- OMELETTE RICE.

Ingredients:
150 grms. Chicken breasts, shredded
1 scoop Japanese rice
2 tbsp. cooking oil
15 grms. Butter
5 grms. Fresh basil leaves
3 tbsp. catsup
30 grms. lolo russo lettuce
1 big plum tomato
1 cucumber
1 jigger white wine
30 grms. white onion
3 eggs
5 grms. parsley, chopped

Procedure:
1. Sauté white onion, shitake mushroom, chicken breast. Flambe with white wine. Add cooked rice, catsup, and fresh chopped basil leaves. Set aside.
2. On pre-heated open top burner, add butter and pour over beaten eggs, and fill with sautéed mixture of rice and chicken.
3. Fold to half-moon shapes. Place on plate and drizzle with catsup.
4. Garnish with tomato, lolo rosso and cucumber and chopped parsley.

*RECIPE by NESTLE All Purpose Cream*

Ingredients:
½ cup butter
250 grms. longganisa hamonado, diced
Seasoning granules
Soy sauce
¾ cup tomato catsup
1 pack NESTLE ALL PURPOSE CREAM
250 grms. angel hair pasta, cooked al dente

Procedure:
1. Melt butter in a saucepan. Add longganisa and seasoning granules and saute for 5 minutes. Add liquid seasoning and catsup.
2. Pour in NESTLE All Purpose cream and simmer for a minute.
3. Toss in cooked noodles until fully coated in sauce.

Ingredients:
1 kg. ground sirloin
2 8g sachets MAGGI MAGIC SARAP
¾ cup minced celery
¾ cup minced onion
¼ cup all-purpose flour
1 egg yolk
olive oil for drizzling

Procedure:
• In a bowl, combine ingredients and mix well.
• Form into small patties and drizzle each with olive oil.
• Grill according to desired doneness.
• Sandwich between mini burger buns and serve with cheese and choice of condiments. Makes 24 mini patties.
